Penne with cocktail tomatoes, arugula and feta cheese

Ingredients for 2 servings:

  • 250g penne
  • 300 g cocktail tomatoes
  • 2 handfuls of arugula
  • 200 g feta cheese
  • 2 garlic cloves
  • salt and pepper
  • chili

Cook the pasta until al dente. In the meantime, quarter the tomatoes, wash and drain the arugula, finely dice the feta cheese, and finely chop (or press) the garlic. Heat a little olive oil in a pan, sauté the garlic and tomatoes briefly (about 5 minutes), but don’t let them get mushy! Season well, and just before the pasta is done, stir in the arugula (only about 1 minute, so it doesn’t overcook). Then stir in the cooked pasta and finally the feta cubes. Serve immediately!
