Ingredients for 3 servings:

  • 6 large potatoes, raw
  • 1 pointed pepper, red
  • 1 red bell pepper(s)
  • 1 garlic clove(s)
  • olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Fried potatoes from Calabria

Cut the peppers into strips approximately 2 cm wide and 4 cm long. Sauté in olive oil until al dente, remove, and set aside. Finely chop the garlic and add it to the peppers. Peel the potatoes and slice them using a slicer (setting 3). Fry the slices in the frying fat until tender, turning frequently. Finally, add the pepper pieces back in and heat through. Season with salt and pepper. Note: I had this recipe at a pizza restaurant in Calabria. It was served with fried oyster mushrooms or cima di rapa (a type of spinach, only coarser and more tangy).
