Ingredients for 4 servings:
- 3 zucchinis
- 5 tbsp Balsamic vinegar, red
- 10 tbsp olive oil
- 1 tsp honey
- 3 tsp basil
- 1 garlic, squeezed
- tsp salt, coarsely ground mixed pepper
- 2 tsp parsley, dried or fresh
- 5 tbsp olive oil, for frying
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes
Whisk olive oil with vinegar and honey until fluffy and season with garlic, basil, etc. Toss the zucchini in the marinade. Let it sit for an hour, stirring occasionally. Then fry in the 5 tablespoons of olive oil for 10 minutes. Serve warm or cold.
