Tomato and zucchini vegetables

Ingredients for 4 servings:

  • 3 m.-large tomato(s)
  • 1 zucchini, approx. 150 g
  • 1 tbsp olive oil
  • Salt and pepper from the mill
  • 1 garlic clove(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Wash the tomatoes and zucchini. Deseed the tomatoes and dice them along with the zucchini. Rub a non-stick pan with a clove of garlic. Heat olive oil in the pan, first add the zucchini cubes and sauté briefly. Then add the tomato cubes, season with a little salt and a generous amount of pepper. Simmer for about 1-2 minutes, and the mixture is done. It goes perfectly with grilled fish.
