Shrimp in tomato sauce with feta

Ingredients for 4 servings:

  • 400 g prawn(s), peeled
  • 750 g tomatoes, pureed
  • 200 g feta cheese
  • 1 bunch of spring onions
  • 3 garlic cloves
  • 1 tbsp thyme
  • 70 ml ouzo
  • 6 tbsp olive oil
  • Pepper, freshly ground
  • 1 chili pepper(s), as desired

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Pour the tomatoes into a baking dish and scatter the crumbled feta on top. Bake in the oven for about 5 minutes, until the cheese begins to melt. Wash the spring onions and cut them into 2-3 cm rings. Heat 3 tablespoons of oil in a pan and fry the spring onions, crushed garlic, and thyme over medium heat for 5 minutes. If you like it a little spicier, add a finely chopped chili pepper. Stir the spring onion mixture into the tomato sauce and place in the oven to keep warm. Heat 3 tablespoons of olive oil in the pan and fry the shrimp for 2-3 minutes, stirring. Deglaze with the ouzo and simmer briefly. Add the shrimp and the cooking fat to the tomato sauce, season with pepper, and mix well. Return everything to the oven for another 5-10 minutes. Remove the dish from the oven, let everything cool slightly and serve with baguette.
