Ingredients for 5 servings:

  • 2 medium-sized potatoes, diced
  • 2 m.-sized carrot(s), diced
  • 2 m.-large zucchini, diced
  • 2 onions, finely chopped
  • 2 stalk(s) leeks, cut into horizontal strips
  • 2 cloves garlic, finely chopped
  • 2 tomatoes, chopped
  • 150 g bacon, roughly diced
  • 50 ml olive oil
  • Meat broth
  • salt and pepper
  • lemon juice
  • mint
  • Parsley

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Choriatiki Soup

Heat the olive oil in a pan. Add the onions and garlic and sauté lightly. Now add the bacon and fry. Next, add all the vegetables, season with salt and pepper, and fry briefly. Deglaze with the meat broth, adding enough to cover the vegetables. Cook everything over medium heat for about 40 minutes. Season with lemon and sprinkle with finely chopped parsley or mint. Serve warm.
