One Pot Pasta all'Arrabbiata

Ingredients for 4 servings:

  • 500 ml tomato(s), pureed
  • 500 ml vegetable stock
  • 400 ml tomato(s), chopped
  • 250 g pasta
  • 250 g soup vegetables, frozen
  • 2 tbsp spice mix (Arrabbiata spice mix)
  • 1 tbsp garlic, chopped
  • 1 tbsp raw cane sugar
  • Cheese substitute (vegan Parmesan)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

a super simple, vegan recipe

Combine all ingredients, except the Parmesan, in a large pot and simmer for 30 minutes with the lid on. Stir occasionally. For the last 10 minutes, reduce the sauce, stirring constantly. If the pasta isn’t cooked through, remove the pot from the heat and let it simmer for 5 minutes with the lid on. Finally, season with salt and pepper and sprinkle with Parmesan.
