Bean salad with bacon cubes and coconut oil

Ingredients for 2 servings:

  • 300 g beans, frozen
  • 125 g bacon cubes
  • 1 shallot(s)
  • 1 tsp coconut oil
  • 2 tbsp sunflower oil
  • 3 tbsp balsamic vinegar, lighter
  • 1 tbsp mixed herbs
  • 5 tbsp water
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cut the beans into bite-sized pieces and cook in boiling salted water for 12 minutes. Dice the shallot. Melt the coconut oil in a small pan and sauté the shallot and bacon bits. Let cool. In a shaker, combine the sunflower oil, balsamic vinegar, water, and herbs. Shake well. Drain the beans and add them to a bowl with the remaining ingredients. Pour the salad dressing over the beans and stir to combine.
