Ingredients for 2 servings:
- 200 g pasta (Greek rice pasta)
- 80 g tomatoes, dried
- 2 large tomatoes, fresh
- 600 ml vegetable stock
- 1 large onion(s)
- 1 clove(s) garlic
- 40 g Parmesan
- salt and pepper
- oregano
- Basil, fresh

Working time approx. 25 minutes; Total time approx. 25 minutes
Risotto with a twist
Finely chop the onion and sauté it with the garlic and rice noodles. Now add the vegetable stock a little at a time, stirring frequently to prevent the risotto from burning. After about 20 minutes, the pasta will be cooked through. Meanwhile, soak the dried tomatoes and chop them. Hollow out the fresh tomatoes, chop them as well, and stir everything into the risotto. Season to taste, sprinkle with Parmesan cheese, and enjoy!
