Spicy fish roe cream – Taramosalata

Ingredients for 6 servings:

  • 250 g potatoes
  • 1 onion(s)
  • 5 tbsp milk
  • 100 g roe (tarama or trout caviar)
  • 200 ml olive oil
  • ½ lemon(s), the juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

like in a Greek restaurant

Peel and roughly dice the potatoes. Boil in salted water for about 20 minutes. Peel and finely dice the onion. Drain the potatoes. Add the milk, onion, roe, and oil, and puree. Season with salt and lemon juice. Refrigerate.
