Ingredients for 2 servings:

  • 250 g pasta (horn pasta)
  • salt water
  • 4 tomatoes
  • 1 bunch of spring onions
  • 1 eggplant(s)
  • 4 tbsp oil
  • Thyme
  • rosemary
  • Salt and pepper, black
  • 100 g sheep’s cheese

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

vegetarian, light and summery

Cook the pasta in salted water. Slice the leek into small rings, dice the eggplant and tomatoes. Heat the oil, sauté the leek and eggplant. After 5 minutes, add the tomatoes and sauté. Season everything with herbs, salt, and pepper. Drain the pasta. Dice the feta cheese and heat it with the pasta in the vegetable pan.
