Mediterranean tomato sauce with pickled tomatoes, feta and fresh basil

Ingredients for 4 servings:

  • 1,000 ml tomato(s), pureed
  • 250 ml cream (UHT cream)
  • 1 jar of tomatoes, dried, pickled
  • 1 pack of feta cheese
  • Basil, fresh
  • oregano
  • marjoram
  • Paprika powder, sweet
  • Paprika powder, hot
  • pepper
  • Salt
  • 1 clove(s) garlic
  • lemon juice

Place the strained tomatoes in a pan and heat. Finely chop or dice the dried, pickled tomatoes and the feta and add them to the pan. Finely chop the garlic and add it as well. Season to taste with oregano, marjoram, sweet paprika, hot paprika, pepper, and salt, and add the cream (if you prefer a lighter dish, you can use less cream or omit it altogether). A few squeezes of lemon juice give the sauce a fruity note. Finally, finely chop the fresh (washed) basil leaves and add them. This goes well with all kinds of pasta, for example, spinach spaghetti is particularly delicious!
