Italian fried eggs, grandmother's style

Ingredients for 4 servings:

  • 1 can/n tomatoes, chopped
  • 3 tbsp olive oil
  • 1 onion(s), diced
  • 1 n. B. garlic clove(s)
  • 8 eggs
  • 40 g Parmesan
  • salt and pepper
  • basil
  • 1 pinch(s) of sugar, as needed

Working time approx. 5 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 55 minutes

vegetarian, simple

First, sauté the diced onion, and garlic if desired, in olive oil until translucent. Add the basil, fry briefly, and then add the chopped tomatoes. Season with salt and pepper and simmer on low heat for 30 minutes. Stir occasionally. Season the sauce again to taste. Then crack the eggs and add them to the tomato sauce like fried eggs. Let them set for 5 minutes, sprinkle with grated Parmesan cheese, and let them set with the lid closed for another 10 minutes. Serve with ciabatta or toast and a green salad with cream or yogurt dressing. Tip: If you like a lot of sauce, use two cans of tomatoes.
