Ingredients for 4 servings:

  • 500g spaghetti
  • Salt
  • olive oil
  • 4 eggs
  • 80 g Parmesan, grated
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

First, put a pot of water on the boil. Only add the salt when the water is boiling. Then cook the pasta in it until al dente. Meanwhile, heat olive oil in a large pan and fry four fried eggs in it. The egg whites should be firm, but the yolks should be nice and creamy. Season with salt and pepper. Once the pasta is done, drain well and then return it to the pot. Add the grated Parmesan cheese to the pasta, along with a good dash of olive oil and pepper. Mix everything well and then divide between four plates. Place one or two fried eggs on top of each plate.
