Melon salad with arugula and mint

Ingredients for 2 servings:

  • ½ melon(s) (net)
  • 40 g arugula
  • 2 tbsp lime juice
  • 1 tsp cane sugar
  • 3 sprigs of mint
  • 4 slice(s) ham, raw
  • Salt
  • pepper
  • 4 tbsp olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

delicious on warm summer days or as a starter

Peel the melon and dice it. Wash the arugula and mint and finely chop them, along with the ham. Place everything in a bowl. Add the lime juice and brown sugar. Season with salt and pepper. Add the olive oil just before serving to prevent the arugula from wilting. Portions vary depending on your appetite. For two people, half a melon makes a nice side dish.
