Ingredients for 6 servings:
- ½ melon(s) , (watermelon)
- 200 g feta cheese
- 100 g black olives
- 1 bunch parsley, flat
- ½ bunch mint
- 1 small onion(s), red
- 1 tbsp olive oil
- 1 tbsp white balsamic vinegar
- salt and pepper

Peel and deseed the watermelon, and cut into approximately 2 cm cubes. Dice the feta cheese. Slice the onion into thin rings and roughly chop the herbs. Gently mix all ingredients in a bowl. Refrigerate for about 30 minutes. You can also use other types of melon instead of watermelon.
