Summer salad with avocado dressing

Ingredients for 4 servings:

  • ½ red bell pepper(s)
  • ½ bell pepper(s), yellow
  • 200 g tomatoes
  • 100 g zucchini or cucumber
  • 1 bunch radishes (approx. 80 – 100 g)
  • 40 g spring onions
  • 200 g iceberg lettuce
  • ½ avocado(s)
  • 50 ml vegetable broth, cold
  • 100 g yogurt, 1.5% fat
  • possibly parsley
  • salt and pepper
  • lemon juice

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash and chop the first seven ingredients, and mix with the avocado dressing. For the dressing, puree the avocado with the remaining ingredients. This is a light summer dish for those who don’t want to eat something heavy. It’s really delicious and quick to make.
