Ingredients for 4 servings:
- 500 g flour
- 1 cube of yeast
- 300 ml water, warm
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp olive oil
- 2 onions
- 2 tbsp olive oil
- 900 g leaf spinach, frozen
- 2 garlic cloves, more if desired
- 400 g ham, cooked
- 100 g Parmesan or Pecorino
- 2 tbsp cream cheese
- salt and pepper
- nutmeg

Pizza pockets with spicy spinach filling
Thaw the spinach leaves in a sieve so that any liquid can drain away. For the dough, sift the flour into a large bowl. Crumble the yeast into the warm water, add the sugar, and mix well. Then pour it into the flour and knead with salt and oil until you have a smooth, non-sticky dough. Add a little more flour or water if necessary. Cover with a slightly damp kitchen towel and let it rise in a warm place for about 1 hour. Peel and finely chop the onion, and sauté in heated olive oil until translucent. Briefly squeeze the spinach dry in the sieve and add it to the onions. Crush the garlic cloves. Dice the ham and grate the pecorino cheese. Mix the ham, pecorino cheese, and cream cheese into the spinach. Season to taste with salt, pepper, and nutmeg. Meanwhile, preheat the oven to 220°C. Briefly knead the dough again on a floured surface, then divide it into four equal pieces. Roll each piece out into a circle and fill with a quarter of the spinach mixture. Place on a greased baking sheet and, if desired, brush with egg yolk or sprinkle with cheese. Bake in the preheated oven for about 15-20 minutes.
