Sweet chestnuts

Ingredients for 5 servings:

  • 1 kg chestnuts, of your choice
  • 2 tbsp butter or oil
  • 1 sprig(s) rosemary

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Before preparing, briefly wash the selected variety of sweet chestnuts and dry them immediately afterward. Before rinsing, check cheaper chestnuts for holes – chestnuts from the deli are often the best. Cut the chestnuts crosswise about 3 cm long and 2-3 mm deep. This works best with a sharp, pointed knife (e.g., a craft knife). Spread all the prepared chestnuts on a baking sheet, making sure they are not stacked on top of each other. Melt the butter in the microwave and briefly soak the rosemary sprig in it. Pre-roast the chestnuts at approx. 200°C for 10 minutes. After this time, drizzle/brush them with the butter. Now roast again at 200°C for approx. 10-15 minutes (the baking time can be reduced using fan-assisted oven). Check the baking process frequently. The characteristics of perfect chestnuts are a slightly cracked shell that peels off easily and only a slightly changed color. The butter and rosemary sprigs are optional. The typical chestnut, or Maroni, is sweet, so the rosemary butter combines two flavor nuances.
