Bruschetta

Ingredients for 6 servings:

  • 6 slices of ciabatta or other white bread
  • 4 garlic cloves
  • 3 tomatoes, fresh (no canned tomatoes!)
  • Water, boiling
  • 2 spring onions
  • 15 leaves of fresh basil
  • some olive oil for drizzling
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

with spring onions

Make a cross-shaped cut in the bottom of the tomatoes’ skin. Pour boiling water over the tomatoes. The skin should now peel off easily. Deseed and finely dice the peeled tomatoes. Finely slice the spring onions. Roughly chop the basil. Combine everything in a bowl, season, and mix well. Toast the bread in the oven (preferably on the grill), rub it with the peeled garlic cloves, drizzle with olive oil, and lightly salt. Spread the tomato mixture on the still-hot slices of bread and serve warm, if possible. Bruschetta also tastes great cold.
