Ingredients for 2 servings:
- 300g tofu
- 60 g breadcrumbs
- 1 large onion(s)
- 1 tsp locust bean gum
- 3 tsp bread spice mix, vegan (pan seasoning)
- 1 bunch of herbs (e.g. flat parsley, chervil, chives)
- 1 tbsp mustard
- salt and pepper
- possibly spice(s)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Crumble the tofu and add the breadcrumbs. Finely chop the onion and herbs and add them. Add the locust bean gum, spices, and mustard. Form small meatballs and fry in the pan for about 3 minutes per side. If, like me, you don’t have vegan pan seasoning, you can mix a mixture of sweet and hot paprika, marjoram, mustard seeds, and cayenne pepper. Your imagination is the limit. The locust bean gum binds the mixture. Non-vegans can easily use an egg. It goes well with mashed potatoes, for example. It’s also great for parties and is also very suitable for non-vegetarian palates.
