Italialady's Spaghetti con Zucchini e Limone

Ingredients for 4 servings:

  • 1 onion(s), finely diced
  • 2 garlic cloves, finely diced
  • 1 zucchini, cut into cubes of approximately 1.5 x 1.5 cm
  • 6 tomatoes, dried in oil, diced
  • 1 lemon(s), untreated
  • 400g spaghetti
  • salt water
  • salt and pepper
  • Cayenne pepper
  • 4 tbsp olive oil
  • 2 tbsp parsley, chopped

Working time approx. 25 minutes; Total time approx. 25 minutes

Spaghetti with zucchini and lemon

Cook the pasta al dente in salted water. In the meantime, rinse the lemon in hot water and dry it. Use a zester to peel off some of the zest for decoration, finely grate the remaining zest and squeeze out the juice. Heat the oil in a large pan and fry the zucchini pieces. Remove from the pan. Add the diced onion and garlic to the pan and sauté. Add the zucchini cubes, the diced tomatoes and 1 tablespoon of lemon zest to the pan. Season with salt and pepper and sauté for about 2 minutes. Season with lemon juice to taste. Drain the pasta, but do not drain completely. Add everything to the pan and mix everything together gently. Season with salt, pepper and cayenne pepper. Garnish with parsley and the lemon zest.
