Ingredients for 4 servings:
- 1 large onion(s)
- 2 garlic cloves
- 2 carrots
- 1 large zucchini
- 1 large bell pepper(s), yellow or red
- 2 tbsp tomato paste
- 1 liter vegetable broth
- 1 tbsp olive oil
- 1 handful of pasta (Italian shell pasta or short soup noodles)
- 1 dashes lemon juice
- oregano
- Thyme
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Roughly chop the onion and finely chop the garlic. Cut the carrots into small rings and the zucchini and bell pepper into cubes. Briefly fry the onion and carrots in olive oil, stir in the tomato paste and roast briefly. Then add the zucchini, bell pepper, and chopped garlic and continue frying for 1-2 minutes at low heat. Pour in the vegetable stock and season with pepper, a dash of lemon juice, and the oregano and thyme. Add the pasta, adding a little more water if desired, and season with salt and pepper. When the pasta is cooked, serve immediately.
