Ingredients for 4 servings:

  • 500 g pasta, (Bavarette No.13 or Spaghetti iNo.5)
  • 500 g vine tomatoes or canned tomatoes
  • ½ bulb(s) garlic, more or less to taste
  • 1 tbsp sugar
  • Salt
  • 3 chili peppers (red Thai chili), more or less to taste
  • 4 tbsp olive oil, good quality

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cook the pasta in plenty of salted water according to the package instructions until al dente. Heat the oil in a deep pan over low heat. Add the garlic, sugar, and salt and fry until the sugar and garlic caramelize to a golden brown. Blanch the tomatoes, peel them, chop them, and add them to the pan. Wash and deseed the chilies (I recommend 3), finely chop them, and add them. Simmer gently for 10 minutes, season to taste, then toss with the pasta and enjoy. Freshly torn basil leaves and freshly grated Parmesan cheese can also be served on the side.
