Garlic spaghetti with leek and tomato

Ingredients for 4 servings:

  • 500g spaghetti
  • 1 leek(s)
  • 3 tomatoes
  • 7 garlic cloves
  • 2 peppers, mild-spicy
  • 3 tbsp tomato paste
  • Sugar
  • olive oil
  • salt and pepper
  • chili powder

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Cook the spaghetti according to the package instructions. Meanwhile, trim and wash the leeks and slice them into thin rings. Finely dice the peppers and tomatoes. Add plenty of olive oil to a large pan and sauté the chopped vegetables. Add the crushed garlic and sauté briefly. Then add the tomato paste, a little sugar, and the spices, stirring constantly to taste. Drain the cooked spaghetti, add it to the pan, and mix well. Serve with a fresh salad and grated cheese, if desired.
