Ingredients for 6 servings:
- 800 g beans, white from the can
- 400g penne
- 500 g chopped tomatoes (from a can or fresh)
- 250 g tomatoes, peeled (from a can or fresh)
- 2 garlic cloves
- 1 onion(s)
- 100 g tomato paste
- 2 tsp soy sauce
- 1 tsp, heaped sugar
- 100 ml olive oil
- salt and pepper
- oregano
- 1 handful of parsley, fresh
- 1 handful of basil, fresh
- some vegetable broth
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Peel the garlic and onions. Dice the onions, and if you’re not using canned tomatoes, peel and dice the tomatoes as well. Purée the peeled tomatoes with a hand blender. Drain the beans well in a sieve. Finely chop the parsley and basil. Cook the pasta as usual, but leave it a little firmer. Sauté the onions and garlic in a little olive oil. Add the diced tomatoes and drained beans. Then add the pureed tomato sauce, a little vegetable stock, and tomato paste. Season with salt, pepper, oregano, soy sauce, and sugar. Let the mixture simmer for 5-10 minutes, or a little longer, depending on the consistency of the sauce. Season again, stir in the chopped herbs and the remaining olive oil, and do not allow to cook any further. Stir in the pasta and let everything sit for a short while.
