Ingredients for 4 servings:

  • 2 liters of water, cold
  • 400 g flour (chickpea flour)
  • Salt
  • 5 tbsp fresh parsley, chopped
  • Olive oil, virgin

Instructions

Working time approx. 10 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes

Process the water and flour in a food processor until smooth and thick, adding more water if necessary. Transfer the mixture to a heavy-bottomed saucepan, season with salt, and bring gently to a boil, stirring constantly. Simmer for 30 minutes, stirring frequently, until the mixture has a very thick, smooth consistency. Add parsley, if desired. Spread the chickpea puree evenly, about 5 mm thick, onto a greased baking sheet or in a frying pan. Allow to cool, then cut into small strips/squares. Fry in batches in plenty of hot oil until golden brown. Drain well and serve while very hot.
