Crispy crostini – with a twist

Ingredients for 4 servings:

  • 50 g olives, mixed and pitted
  • 1 red bell pepper(s)
  • 5 stalks of thyme
  • 4 tbsp olive oil
  • 12 slice(s) baguette(s) or ciabatta bread
  • salt and pepper
  • 250 g minced meat, mixed
  • 30 g Parmesan cheese, in one piece

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Chop the olives. Peel the bell peppers, preferably with a vegetable peeler, and finely dice them. Heat 3 tablespoons of oil in batches. Toast the bread for 1-2 minutes on each side until golden brown and season with a little salt. Heat 1 tablespoon of oil in a pan. Fry the minced meat for 5-7 minutes until crumbly. Mix with the olives, bell peppers, and very finely chopped thyme, season with salt and pepper. Spread the minced meat mixture on the bread and grate the fresh Parmesan cheese over it.
