Pesto – Parmesan – Toast

Ingredients for 4 servings:

  • 1 white bread stick(s)
  • 16 large tomatoes, dried (cut into thin strips)
  • 150 g fresh Parmesan cheese (thinly sliced)
  • 2 tbsp chives (chopped)
  • 50 g basil leaves, fresh
  • 4 tbsp pine nuts
  • 3 cloves garlic
  • 3 tbsp olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For the pesto: Blend the basil leaves, chives, pine nuts, garlic, and olive oil with a hand blender until smooth. Slice the white bread. Then toast in the oven under the hot grill until golden brown. Spread the pesto evenly over the toasted slices. Top with the sun-dried tomatoes and shaved Parmesan cheese. Tastes great as an aperitif with a glass of Prosecco!
