Ingredients for 6 servings:

  • 1,250 g turkey breast, fat-free in equal-sized pieces
  • 2 tbsp sage, chopped
  • 1 sprig(s) rosemary, needles chopped
  • 1 medium-sized lemon(s), juice
  • 120 g bacon, thinly sliced
  • 2 tbsp olive oil
  • 1 bunch of sage
  • Salt and pepper, black

Instructions

Working time approx. 10 minutes; Rest period approx. 1 day; Cooking/baking time approx. 20 minutes; Total time approx. 1 day 30 minutes

Combine turkey cubes with chopped sage, rosemary, lemon juice, and olive oil, and marinate overnight—preferably 24 hours. The next day, remove the cubes from the marinade, let them drain, and wrap as many pieces as possible with bacon. Thread the meat, with and without bacon, and sage leaves tightly onto skewers, alternating them, and season with salt and pepper. Grill over moderate heat for about 15-20 minutes. Brush occasionally with the marinade.
