Grilled plaice saltimbocca with Mediterranean bean salad

Ingredients for 4 servings:

  • 500 g beans, green
  • salt and pepper
  • 2 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • 2 garlic cloves, more if desired
  • 250 g cherry tomatoes
  • 250g mozzarella
  • basil
  • Salt
  • 8 fish fillets (plaice fillets)
  • 8 leaves sage, large
  • 8 slices of Parma ham
  • pepper

simple and very tasty summer dish

First, for the salad, clean the beans, cook them in plenty of salted water, and drain. Rinse them with cold water until they are just lukewarm, then cut them into pieces about 5 cm in size. Marinate with salt, pepper, balsamic vinegar, and oil. Peel and finely chop the garlic cloves, halve the tomatoes, and dice the mozzarella. Mix everything with the beans. Garnish with basil leaves, if desired. Now trim off the frayed fins from the plaice fillets and remove any remaining bones. Place the fillets skin-side down on the work surface. Place a sage leaf and a slice of ham on each side, season with pepper, and fold them together. Secure each one with 1-2 toothpicks. Grill the fish on aluminum foil or in an aluminum grill pan for about 5 minutes on each side, then serve with the bean salad. Fresh ciabatta goes well with this!
