Zucchini gratinate

Ingredients for 4 servings:

  • 4 m.-large zucchini
  • n. B. wheat flour
  • e.g. olive oil
  • salt and pepper
  • 800 g tomatoes, ripe
  • 200 g mozzarella, cut into thin slices
  • herbs, Italian

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

Wash the zucchini, trim the ends, and cut into thin slices lengthwise. Place on a plate, sprinkle with salt and pepper, and let rest for about 1/2 hour. Then coat in flour and fry in batches in olive oil. Layer the fried zucchini in a baking dish. Meanwhile, blanch the tomatoes, peel, deseed, chop, and sauté in the hot oil. Season with salt to release their juices. Once the tomato pieces are soft, puree. Season to taste with basil, thyme, and oregano. Reduce the sauce slightly. Pour the tomato sauce over the zucchini. Cover with mozzarella slices and bake in the oven at 180°C for about 20-30 minutes. Serve with ciabatta and a green salad.
