Ingredients for 4 servings:
- 3 tbsp olive oil
- 1 bunch of spring onions, cut into rolls
- 1 eggplant(s), diced
- 2 bell peppers, red, yellow, diced
- 300 g mushrooms, sliced
- Garlic
- chili
- oregano
- Sugar
- 400 ml yogurt, Greek
- 3 eggs
- 200 g grated feta cheese
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Heat the olive oil and fry the spring onions, bell peppers, mushrooms, and eggplant for 5-7 minutes. Season well and layer in a dish. Bake at 200°C for about 30-35 minutes. Mix the yogurt, eggs, and feta cheese and scatter over the top 15 minutes before the end of cooking.
