Ingredients for 4 servings:

  • 3 tbsp olive oil
  • 1 bunch of spring onions, cut into rolls
  • 1 eggplant(s), diced
  • 2 bell peppers, red, yellow, diced
  • 300 g mushrooms, sliced
  • Garlic
  • chili
  • oregano
  • Sugar
  • 400 ml yogurt, Greek
  • 3 eggs
  • 200 g grated feta cheese

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Heat the olive oil and fry the spring onions, bell peppers, mushrooms, and eggplant for 5-7 minutes. Season well and layer in a dish. Bake at 200°C for about 30-35 minutes. Mix the yogurt, eggs, and feta cheese and scatter over the top 15 minutes before the end of cooking.
