Ingredients for 4 servings:

  • 8 thin pancakes
  • 4 tomatoes
  • 1 m.-sized onion(s)
  • 1 garlic clove(s)
  • 2 zucchinis
  • 10 black olives without stones
  • 1 red bell pepper(s)
  • 100g mozzarella
  • 200 g cooked ham
  • 2 tbsp olive oil
  • 40 g Parmesan
  • salt and pepper
  • some oregano
  • some basil
  • Butter for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the tomatoes, onion, garlic, zucchini, olives, bell pepper, mozzarella, and ham into small cubes. Butter the baking dish. Sauté the onion and garlic in olive oil until translucent. Add the bell pepper and tomatoes, roast briefly, and season with salt and pepper. Add the olives, zucchini, ham, mozzarella, oregano, and basil, and season well. Spread the pancakes with the vegetable and ham filling and roll them up. Layer them in the baking dish, sprinkle with Parmesan cheese, and cover with aluminum foil. Bake in a preheated oven at 200°C for about 8 minutes. Tip: For a heartier dish, you can use smoked bacon instead of the ham. For vegetarians, simply omit the ham.
