Ingredients for 4 servings:
- 500 ml grapefruit juice
- 2 tbsp sugar
- 4 tbsp semolina (durum wheat semolina)
- 3 mandarin oranges, finely chopped
- ½ tsp baking powder
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Bring the juice and sugar to a boil. When it’s boiling, remove from the heat, stir in the semolina, and let it swell over low heat for about 2 minutes, stirring continuously. Then place the pot in a cold water bath, add the baking powder, and beat the semolina pudding vigorously with a hand mixer for 5 minutes until fluffy. Once whipped, pour the foam into a bowl and fold in the mandarin oranges.
