Ingredients for 8 servings:

  • 100 g walnuts, chopped
  • 100 ml maple syrup
  • 175 g sugar
  • 1 vanilla pod(s)
  • 100 g cookies, chocolate chip cookies
  • 4 eggs
  • 400 g cream
  • 150 g light cream

Instructions

Working time approx. 30 minutes; Rest time approx. 5 hours 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 5 hours 50 minutes

Semifreddo with walnut caramel and cookies

Simmer the maple syrup and 75g of sugar in a large pan for 2 minutes. Stir in the nuts and simmer for a further 1 minute. Spread out on baking paper and allow to cool. Then roughly chop them. Line a loaf tin with cling film. Scrape the seeds from the vanilla pod. Roughly chop the cookies. Separate the eggs and beat the egg whites until stiff. Also beat the cream. Chill both. Beat the egg yolks, vanilla seeds and 100g of sugar for 5 minutes until creamy, until the vanilla is completely distributed. Stir in the crème légère, then fold in the cookies and the nut caramel. Also fold in the cream and beaten egg whites and immediately pour into the tin. Cover with cling film and chill for at least 5 hours. Allow to thaw slightly before serving. Cut into slices and serve with chocolate sauce.
