Semi-frozen almond pastries

Ingredients for 6 servings:

  • 200 g biscuits (cantuccini)
  • 50 g chocolate
  • 2 eggs, including the yolk
  • 50 g sugar
  • ½ liter cream
  • Chocolate
  • cream
  • liqueur

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes

Cantuccini semifreddo

Grind the almond biscuits and chocolate in a food processor, not too finely. Beat the egg yolks with the sugar until creamy. Fold in the almond biscuits, chocolate, and stiffly whipped cream. Pour into a loaf pan lined with cling film. Freeze to set. Turn out and slice to serve. Serve with a chocolate sauce: Melt dark chocolate in twice the amount of cream, then flavor with mint or orange liqueur.
