Pasta with pistachio cream sauce

Ingredients for 2 servings:

  • 300g pasta
  • 50 g pistachios, ground
  • 2 sprigs basil
  • 3 shallots
  • 3 tbsp olive oil
  • 1 chili pepper(s)
  • 2 garlic cloves
  • 4 cl brandy
  • 300 ml cream
  • 2 tbsp Parmesan, grated
  • 5 tbsp pasta water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Pluck and chop the basil leaves, then roast them in a non-stick pot or pan without fat until they begin to smell. Add the pistachios and roast them until they smell too. Reduce the heat and add the chopped shallots and olive oil. Slice the chili pepper into rings and add it. Chop the garlic and add it along with the brandy and cream. Simmer everything for 15 minutes. Prepare the pasta according to the instructions. Add the Parmesan cheese and pasta water to the sauce. Drain the pasta and add it. Season to taste with salt and pepper and let it stand for 2-3 minutes.
