Berry Seduction
The perfect berry seduction recipe with a picture and simple step-by-step instructions.
Mascarpone cream:
- 250 g Mascarpone
- 250 g Quark
- 1 Pc. Pulp of a vanilla pod
- 100 g Cream
- Powdered sugar
Berry mousse:
- 700 g Frozen berry mix
- 0,5 tsp Lemon zest
- 1 tbsp Lemon juice
- 1 tbsp Brown cane sugar
Spekulatius:
- 250 g Flour
- 1 tsp Baking powder
- 80 g Cane sugar
- 1 packet Vanilla sugar
- 1 Msp Cardamom spice
- 1 Msp Ground cloves
- 1 tsp Cinnamon
- 100 g Butter
Mascarpone cream:
- Cut the vanilla pod lengthways and scrape out the pulp.
- Put in a bowl together with the mascarpone and quark, mix with a mixer or hand mixer until it is a homogeneous, creamy mixture.
- Then season with powdered sugar and refrigerate.
Berry mousse:
- The berry mixture must be thawed. Put all ingredients in a blender jar and puree with a blender.
- If it is still too sour after trying it, you can simply add a little more cane sugar and puree again. Then chill.
Spekulatius:
- The dough must be made 1 day in advance and refrigerated overnight in the refrigerator.
- Mix all ingredients for the dough. Wrap in cling film and chill overnight.
- The next day, roll out the dough and cut out biscuits. Bake at 175 ° C for about 10 minutes. Then let it cool down and roughly crumble.
Serving:
- The ingredients are layered in a dessert glass. Then start with crumbled speculoos with mascarpone cream, followed by berry mousse.
- Repeat this several times (depending on your mood).
