Salmon sauce

Ingredients for 4 servings:

  • 1 shallot(s), finely chopped
  • 1 clove(s) garlic, crushed
  • 30 g butter
  • 3 tomatoes, deseeded, peeled
  • 2 tbsp lemon juice
  • 2 tbsp wine, white, dry
  • ½ bunch cress
  • 175 g smoked salmon, sliced
  • 400 ml cream
  • salt and pepper
  • 2 tbsp brandy

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with tagliatelle or spaetzle

Sauté the onions and garlic in butter until translucent. Add the tomatoes and simmer for 5 minutes. Pour in the brandy, white wine, and cream; season with salt and pepper. Cook for 5 minutes, stirring. Cut the salmon into strips, drizzle with lemon juice, and add to the hot sauce with the chopped cress. Do not boil. Serve with pasta or spaetzle and a fresh salad.
