Spaghetti Marchigiani

Ingredients for 4 servings:

  • 1 onion(s), chopped
  • 3 garlic cloves, chopped
  • 1 small pepper (if desired)
  • 3 tbsp olive oil
  • 200 ml wine, red or white
  • 7 large tomatoes, peeled
  • 4 tbsp basil, chopped
  • 500 g spaghetti, al dente
  • Salt
  • Parmesan

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Spaghetti with tomatoes

Sauté the onion, garlic, and chili peppers in olive oil until softened. If you don’t like it spicy, you can omit the chili peppers. Add the peeled and chopped tomatoes and continue sautéing. Once the tomato juice has evaporated, add the wine and basil. Cover and simmer over medium heat for about ten to fifteen minutes, stirring occasionally and, if necessary, adding water or—more Italian—wine. Season with salt. Add the drained spaghetti to the sauce and let it “drink” the sauce for a few minutes while stirring. Serve with freshly grated Parmesan cheese. A very simple and delicious original recipe from the Marche region that I could eat almost every day.
