Salmon fillet with vegetables

Ingredients for 4 servings:

  • 1 kg salmon fillet(s) (wild or farmed salmon)
  • 1 bulb(s) of fennel
  • 1 mango(s)
  • 1 bulb(s) of ginger (size according to taste)
  • 1 stalk(s) leek
  • 1 bunch of dill
  • 1 lemon(s), sliced
  • 125 ml white wine
  • olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Take a large piece of wild or farmed salmon and place it in a baking dish. Cut the fennel and mango into pieces or slices and place them on top of the salmon. Grate the ginger and slice the leek into rings. Distribute both on the salmon side in the same way. Finely chop the dill and sprinkle it on top. Season with salt and pepper, and finally place the lemon slices on top of the salmon. Drizzle with olive oil and add 125 ml of white wine to the dish. Cover the dish with aluminum foil and place it in a preheated oven at 150°C for 55 minutes.
