Ingredients for 3 servings:
- 4 peppers, red, fresh
- 1 chili pepper(s), red, dried
- 1 onion(s)
- 700 g cherry tomatoes
- 3 garlic cloves
- 1 shot of red wine
- Parsley
- basil
- olive oil
- Salt
- 500g penne
- some mozzarella, grated
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Dice the onion. Finely chop the peppers and garlic. Dice the cherry tomatoes. Finely chop the parsley and basil. Heat the olive oil in a high pan. Briefly fry the onions and peppers in the hot olive oil. Add the garlic and continue frying until the onions are translucent. Add the diced tomatoes. Deglaze with a small splash of red wine. Cover and simmer on low to medium heat until the tomatoes are cooked through. Season with salt. Cook the penne in boiling salted water for 12-15 minutes until al dente. Serve with grated mozzarella and fresh basil for garnish.
