Ingredients for 4 servings:
- 120 g Parma ham
- 1 m.-sized onion(s) (vegetable onion)
- 2 bell peppers, red
- 400g spaghetti
- 200 ml sweet cream
- 200 ml vegetable stock
- 6 tbsp ajvar
- 2 eggs
- 60 g Parmesan, grated
- salt and pepper
- olive oil
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Cook the spaghetti according to the package instructions until al dente. In the meantime, cut the Parma ham into thin strips. Peel and finely dice the onion. Trim the bell peppers and cut them into 1 cm cubes. Fry the diced onion and bell pepper in heated olive oil. Add the ajvar, salt, and pepper. Pour in the stock and add a little of the cream. Mix together the eggs, remaining cream, and Parmesan. When the spaghetti is ready, drain it and add it to the pan with the diced onion and ham. Add the egg, cream, and cheese sauce to the pan (careful, it must not boil). Now add the Parma ham and mix for a few minutes. Wait until the Parmesan has dissolved and serve immediately.
