Stuffed sardines

Ingredients for 4 servings:

  • 1 kg sardines
  • 3 eggs
  • 1 onion(s)
  • 1 clove(s) garlic
  • 30 g Parmesan
  • 30 g breadcrumbs
  • Salt
  • Parsley
  • oil
  • 1 lemon(s)

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Gut the sardines, remove the heads and central bones, wash, and place the fillets uncovered. Chop the garlic, onion, and parsley, and sauté the onion in oil. Reduce the heat. Add the breadcrumbs, parsley, garlic, and Parmesan cheese. Mix well, remove the pan from the heat, and stir in the beaten eggs. Stuff the sardines with the mixture and fold them together. Place them in a baking dish, drizzle with a little oil, sprinkle with a handful of breadcrumbs and parsley, and bake in an oven preheated to 200°C (400°F) for about 20 minutes. Serve with lemon wedges. Tip: Spoon the filling onto an open sardine and cover with another sardine. Fry these “sandwiches” in a pan with oil on both sides.
