Panna cotta with lime syrup

Ingredients for 4 servings:

  • 500 g cream
  • 70 g sugar
  • 1 vanilla pod(s) (or 1 packet of Bourbon vanilla flavoring)
  • 3 sheets of gelatin (white)
  • 4 limes
  • Sugar (same amount as lime juice)

Instructions

Working time approx. 40 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 40 minutes

Scrape out the vanilla pod and mix with the cream and sugar. Soak the gelatine in cold water. Gently heat the cream in a saucepan and simmer gently for about 10 minutes, stirring occasionally. Remove from the heat and stir the squeezed gelatine leaves into the warm liquid until dissolved. Divide the still-hot mixture into small, turn-out bowls and chill in the refrigerator for about 3-4 hours. To make the syrup, squeeze the limes and bring the juice to a strong boil with equal parts sugar for about 5 minutes. Pour into a screw-top jar or bottle and allow to cool. To serve, turn the panna cotta out onto a dessert plate and garnish with the lime syrup.
