Kirk's Caribbean Cream of Corn Soup

Ingredients for 4 servings:

  • 1 onion(s), finely chopped
  • 3 cloves garlic, finely chopped
  • 1 piece(s) ginger, finely chopped
  • 1 chili pepper(s), hot (e.g. jalapeño), finely chopped, remove seeds
  • 1 liter chicken broth
  • 3 cans of corn
  • olive oil
  • 1 bunch of cilantro
  • 1 cup sour cream
  • 1 lime(s), the juice
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the olive oil in a soup pot and sauté the onions. Add the garlic, ginger, and jalapeño peppers and sauté. Add the corn and chicken broth. Simmer for 20 minutes. Puree the soup and strain it through a fine sieve to remove any fluff from the corn husks. Bring the soup back to a boil and remove from the heat. Stir in the cilantro, sour cream, and lime juice. Season to taste with salt and pepper.
