Apple pie, classic French recipe, for 6 pieces

Knead together the flour, butter, sugar, and a pinch of salt. Then, with half a glass of water, form it into a smooth ball of dough. Chill the dough. Then, prepare the apple compote. Peel 2 apples and cut them into small pieces. Heat them in a saucepan with 2 tablespoons of sugar, a little lemon juice if desired, and the seeds of a vanilla pod or a teaspoon of cinnamon powder. After simmering for about 15 minutes on low heat (or 8 minutes in the microwave), puree with a hand blender until applesauce is smooth. Roll out the dough and line a 26 cm diameter tart tin, either lined with baking paper or buttered and floured. Prick small holes in it with a fork. Peel the remaining 3 apples and slice them into thin slices. First, spread the apple compote over the dough, then arrange the apple slices tightly on top. Bake in a preheated oven at 200°C (top/bottom heat) for 30 minutes.
