Egg fried rice

Ingredients for 4 servings:

  • 400 g long grain rice (e.g. jasmine rice)
  • 3 spring onions
  • 3 eggs
  • 2 tsp sesame oil
  • 2 tbsp peanut oil
  • 1 tsp salt
  • little pepper, black

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Chinese cuisine

Cook the rice according to the instructions. Let cool. Wash, trim, and finely chop the spring onions. Crack the eggs into a bowl, whisk them lightly, and mix with the sesame oil and 1/2 teaspoon of salt. Heat a wok until very hot, then add the peanut oil and let it get very hot. Add the cold rice and stir-fry for 3 minutes, until the rice is hot. Add the egg mixture to the rice and stir-fry for another 2 minutes, until the egg is completely set and the mixture is dry. Stir in the remaining salt and pepper, add the spring onions, and stir-fry for about 2 more minutes. Serve hot.
