Ingredients for 2 servings:
- 1 pack of lamb’s lettuce
- ½ pomegranate
- 1 apple
- 1 beetroot
- ½ roll(s) goat cheese
- 1 handful of walnuts
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar (pomegranate vinegar, or other sweet vinegar)
- 1 tbsp balsamic vinegar, lighter
- 1 tsp mustard
- Salt
- 1 pinch(s) of sugar, if desired
Instructions

Wash the lamb’s lettuce, remove the pomegranate seeds, and finely chop the beetroot, apple, and goat cheese. Place everything in a salad bowl and crumble the walnuts over the top. For the dressing, mix all ingredients thoroughly. Season to taste and add a little more sugar, salt, or mustard, if desired.
